Cava is prepared following a traditional method which is known as Method Classique or Method Champenoise. Here is a brief outlook of the procedure
1. Generally, grapes used in the Manufacture of Cava are harvested from the firm early to ensure that the high acidity levels are maintained.
2. Then, they are each squeezed to produce some clear juice.
3. The juices obtained are then fermented in tanks made from stainless steel or barrels made of oak; this results in a dry base.
4. Moreover, the base wines which are obtained from the above step are blended in portions to create a Cuvee.
5. The wine that has been blended is put into a bottle, and then some yeast and sugar are placed into each wine bottle so that the process of secondary fermentation can start. In particular, the bottles are sealed using a crown cap.
6. These bottles will then be put into a side’s cellar so that secondary fermentation can occur. However, during this process, the wine produces a lot of carbon dioxide, remaining trapped inside the wine bottles to form bubbles.
7. The bottles then rest, which can be for a very long period, a minimum of 9 months to many years.
8. In this process, the dead yeast is collected from the wine in a riddling procedure and removed in another called disgorgement.
9. After removing dead yeast, sugar mixed with still wine is added into the bottle in the next step. In fact, this sugar will be a significant determinant of the wine’s sweetness.
10. The wine is then corked, the bottles are put through a very high-tech machine before they can be ready for sale. However, before the wine is shipped to different places to be sold, another 6v month another 6v month will be added to ferment and mature fully.
